If you do not get accepted for a funded research study you can still apply for exchange programs to study Chinese in China. These are also requiring an application and you still need to impress people making the decision. It is easier to get accepted for these programs, as they are more widely available, but you will need to get prepared in time. And as the courses are popular and the number of students accepted is limited you will have to ensure you stand a good chance.
You can exchange a year or a semester to improve your Chinese skills, but the general rules are again that you need to have some kind of knowledge about China, the culture and language before you apply. It is easy to get prepared by taking on a Chinese course from a native speaker and picking up some historical details and statistics about the country.
